Penne with zucchini and ham sauce

Ingredients for 4 servings:

  • 400g penne
  • 200 ml cream or cream substitute
  • 2 zucchinis
  • 200 g ham, cooked, sliced
  • 1 onion(s)
  • 2 tbsp tomato paste
  • 3 tbsp tomato ketchup
  • 2 tbsp olive oil
  • 6 tbsp Parmesan, freshly grated
  • Salt
  • Cayenne pepper
  • pepper
  • Wine, red

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Bring a large pot of water to a boil for the penne. Cook the penne al dente according to the package instructions. For the sauce, peel and finely chop the onions. Wash the zucchini and dice it along with the ham. Heat the olive oil in a pan and fry the onions until translucent. Add the cooked ham and fry until golden brown. Add the zucchini cubes and fry for about 5 minutes more. Add the cream and a splash of red wine. Let the whole thing simmer. Gradually add the tomato paste and tomato ketchup and continue to simmer on low heat. Season to taste with salt, pepper, and cayenne pepper. Just before serving, add the Parmesan cheese and stir again. Plate the sauce with the pasta and serve. Delicious with a glass of red wine. Tip: Children also enjoy the pasta without the red wine.
