Pepper and apple salad with cottage cheese

Ingredients for 4 servings:

  • 1 bell pepper(s), red
  • 1 apple
  • 2 spring onions
  • 1 cup cottage cheese
  • e.g. pomegranate seeds
  • salt and pepper
  • Sugar
  • Oil, e.g. walnut oil
  • Vinegar, e.g. raspberry vinegar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the bell pepper and apple into fairly small pieces. Slice the spring onions into thin rings. Place everything in a bowl and mix with the cottage cheese. Season to taste with salt, pepper, oil, vinegar, and perhaps a little sugar. I’ve also added the seeds from a quarter of a pomegranate. It tastes great too! It’s easy to prepare and tastes great the next day!
