Ingredients for 4 servings:
- 1 tbsp olive oil
- 2 tbsp water
- 2 red peppers, finely chopped
- 1 garlic clove(s), finely chopped
- 1 onion(s), finely chopped
- 400 g tomatoes, chopped from the can
- 1.2 liters of vegetable broth
- salt and pepper
- possibly basil
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Gently heat the oil, water, paprika, garlic, and onion in a saucepan and simmer for 5-10 minutes, until the vegetables are tender. Cover and simmer for another 10 minutes. Add the tomatoes and broth, season with salt and pepper, and simmer uncovered for another 15 minutes. Garnish with fresh basil, if desired.
