Ingredients for 4 servings:
- 8 fish(s) (matjes), whole
- 2 apples (Boskoop)
- 4 large onions
- 4 eggs, hard-boiled
- 4 medium-sized gherkins
- 1 tbsp capers, heaped tbsp
- 1 tbsp parsley
- some pepper
- 1 cup sour cream
- 1 cup of natural yogurt
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
Skin the herring, remove the bones, and cut into pieces. Peel, core, and dice the apples. Peel the onions and roughly dice them. Peel and dice the eggs. Peel and slice the gherkins. Place everything in a bowl. Add the capers without broth, along with finely chopped fresh or dried parsley. Season with pepper. Fold in the sour cream and yogurt. Mix everything well again. Let it sit in the refrigerator until ready to serve. The yogurt and sour cream can also be replaced with quark. Serve the herring salad with boiled potatoes.
