Ingredients for 6 servings:
- 60 g sugar
- 3 large eggs
- 300 ml milk
- 150 g white chocolate, broken into pieces
- ½ tsp peppermint extract
- 200 ml double cream
- 45 g chips (chocolate), milk or dark
- possibly food coloring, green
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
In a heatproof bowl, beat the sugar and egg yolks until thick and creamy. Place the bowl over a pan of simmering water and slowly add the milk, stirring occasionally, until the mixture begins to thicken. Add the broken white chocolate and stir continuously until the chocolate is melted and the mixture is creamy. Remove the bowl from the pan and stir in the peppermint extract. If desired, add 1 teaspoon of green food coloring. Cover the surface with plastic wrap and let the mixture cool completely. Stir the double cream into the cooled mixture and churn the mixture in an ice cream maker for 20 minutes according to the manufacturer’s instructions. Stir in the chocolate chips and transfer the ice cream to a freezer container. Cover the ice cream with plastic wrap and place it in the freezer until ready to serve.
