Kohlrabi soup

Ingredients for 6 servings:

  • 2 liters of water
  • 250 g smoked Kasseler
  • 250 ml sour cream
  • 2 eggs, separated
  • 4 kohlrabi
  • 2 tbsp flat-leaf parsley, chopped
  • 1 tbsp Fondor
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the smoked pork and kohlrabi and dice them. Bring to a boil in 2 liters of salted water. Simmer for about 20 minutes. Separate the eggs, pour the egg whites into the soup, and mix with a fork. Mix the egg yolks with the sour cream. Remove the soup from the heat and add a ladleful of soup to the sour cream. Then pour the soup into the soup pot while stirring. Heat the soup for another 5 minutes. Season with Fondor and pepper, and garnish with chopped parsley.
