Peppermint Pesto

The perfect peppermint pesto recipe with a picture and simple step-by-step instructions.

  • 1 dl Water
  • 80 g Sugar
  • 100 g Walnut fresh
  • 2 Handful Peppermint leaves
  • 2 Pc. Lime fruit juice
  • 5 tbsp Extra virgin olive oil

Preparations:

  1. Bring the water and sugar to the boil to form a syrup, then cool. Roast walnuts. Wash the peppermint leaves, spin dry. Grate 1 lime then squeeze out both, put the juice aside.
  2. Put half of the water, the walnuts, the peppermint leaves, the olive oil and the lime juice in a mixing glass and mix finely. Pour into screw-top jars, cover with a thin film of oil.
