Ingredients for 4 servings:

  • 2 bell peppers
  • 1 cucumber(s)
  • olive oil
  • Balsamic vinegar
  • Vegetable broth, granulated
  • Sugar or sweetener, liquid

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Clean the bell peppers and cut them into small pieces. Grate the cucumber, with or without the skin, and add it to the bell peppers. Whisk together olive oil, balsamic vinegar, and vegetable stock granules, and season with sugar or sweetener to taste. Toss with the vegetables and serve.
