Ingredients for 1 servings:

  • 500 g flour
  • 300 ml water, lukewarm
  • 21 g fresh yeast
  • 16 g salt
  • e.g. poppy seeds, sesame, grains etc.
  • e.g. walnuts or linseed, fried onions, bacon or dried tomatoes

Instructions

Working time approx. 10 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 15 minutes; Total time approx. 12 hours 25 minutes

Mix all the flour with salt, dissolve the yeast in the water, add it, and then mix everything with the dough hook of a hand mixer until a moist dough forms. If you like, add 100g of chopped walnuts or 100g of flaxseed, 2 chopped and fried onions, 125g of bacon, sun-dried tomatoes, or whatever you like. Otherwise, cover the dough and refrigerate for 8-12 hours. Preheat the oven to 250°C with a baking tray inside. Spoon the dough onto baking paper; do not knead. Then place the rolls, lined with baking paper, on the hot baking tray and bake for 12-15 minutes. Brush with water before and during baking if you want them to be extra crispy.
