Persimmon bowl with carambola

Ingredients for 2 servings:

  • 2 persimmons, overripe
  • 4 tbsp, heaped Skyr
  • 4 tbsp oat bran, fine
  • 4 carambola slices

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Scoop out the flesh from the overripe persimmon with a spoon. Mash it with a fork. If the persimmon isn’t too ripe, puree it. Stir in Icelandic cream cheese and finely ground oat bran. Serve in bowls. Finally, garnish with star fruit.
