Ingredients for 4 servings:

  • 4 pts. basil (frozen, 25g each)
  • 3 garlic cloves
  • 40 pine nuts
  • 12 tbsp olive oil (about 125 ml)
  • 50 ml water
  • 100 g cheese, Grana Padano or Parmesan

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Pesto the way I like it

Peel the garlic cloves and grate the cheese. Puree the basil, garlic, and pine nuts using the attachment of a hand mixer. (You can also use other chopping appliances.) Place the basil puree in a bowl, add olive oil, and mix well. Add the grated cheese and water and mix well. Let it sit in the refrigerator. This goes well with spaghetti, but we like it best with spinach pasta.
