Pesto made from fresh herbs and tomatoes

Ingredients for 4 servings:

  • 2 handfuls of basil
  • 2 sprigs of oregano
  • 2 tbsp pine nuts
  • 5 tomatoes
  • 1 tbsp olive oil
  • Parmesan, freshly grated
  • salt and pepper
  • Garlic

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Pluck the basil and oregano leaves from the stems and wash them. Meanwhile, toast the pine nuts in a non-stick pan without oil until slightly browned. Dice the tomatoes. If you like, you can also use dried ones, which are more flavorful. Place the pine nuts, tomatoes, basil, and oregano in a blender and pulse briefly. Add a little olive oil and continue blending until a paste forms. Add Parmesan cheese to taste and blend again. Season to taste with garlic, salt, and pepper. Transfer to a jar and refrigerate. Tastes great with any type of pasta.
