Petra's leek – cheese soup with ham

Ingredients for 8 servings:

  • 2 onions
  • 2 stalk(s) leeks
  • 200 g ham, cooked, lean
  • 250 g processed cheese
  • 30 g butter
  • 1 cup sour cream
  • 3 tbsp flour
  • 2 liters of vegetable broth
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely chop the onions. Halve the leek, rinse the leaves under running water, and cut into thin strips. Sauté the onions in butter until translucent. Briefly sauté the leek, dust with flour. Add the broth, season to taste, and simmer gently for about 15 minutes. Cut the ham into thin strips, mix the cream cheese with the sour cream until smooth, and add both to the soup. Bring back to a boil and season well with salt, pepper, and nutmeg. Serve with a baguette.
