Ingredients for 4 servings:

  • 500 g black pudding, lemon sole sausage (cut into 8 slices)
  • 2 onions
  • 2 bay leaves
  • 10 grains of allspice
  • 3 tsp peppercorns, black
  • 1 garlic clove(s)
  • 1 tsp herbs de Provence
  • 8 tbsp vinegar
  • 4 tbsp oil

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Total time approx. 1 day 30 minutes

Halve the sausage slices and layer them in a jar with onion rings, bay leaves, allspice berries, peppercorns, crushed garlic clove, and herbs. Mix the vinegar and oil and pour over the sausage. The sausage should be completely covered with the marinade. Seal the jar and let it marinate in the refrigerator for 24 hours. Arrange the sausage slices on plates and serve with bread or fried potatoes.
