Spicy minced cabbage salad

Ingredients for 12 servings:

  • 1 white cabbage (approx. 1.3 kg)
  • Salt
  • pepper, black
  • 2 onions
  • 1 ½ kg minced meat, mixed
  • 8 tbsp oil
  • 750 g tomatoes
  • 4 tbsp tomato ketchup
  • 1 tbsp thyme, dried
  • ⅛ liter white wine vinegar
  • Cayenne pepper
  • some sugar

Instructions

Working time approx. 20 minutes; Rest time approx. 4 hours 45 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 5 hours 15 minutes

Party recipe

Clean and wash the cabbage, cut into eighths, and remove the stalk. Slice the cabbage into thin slices. Sprinkle with 1 tablespoon of salt in a large bowl and knead vigorously with your hands. Let stand for about 45 minutes. Peel and roughly dice the onions. Brown the minced meat in batches in 2-3 tablespoons of hot oil until crumbly and well-fried. Season with salt and pepper. Wash and roughly chop the tomatoes. Mix in the ketchup and seasonings. Whisk in 5 tablespoons of oil. Mix loosely with the cabbage, onions, minced meat, and tomatoes, cover, and let stand for at least 4 hours. Season again to taste.
