Pickled fresh tomatoes

Ingredients for 4 servings:

  • 125 ml white wine
  • 75 ml vinegar
  • 200 g tomatoes, dried
  • Herbs, as desired or just basil leaves
  • olive oil
  • 1 chili pepper(s), dried (or more to taste)
  • Capers (to taste)
  • 2 cloves garlic, peeled, (can be more)
  • 1 liter of water

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Bring the water, white wine, and vinegar to a boil, add the tomatoes, and simmer over low heat for 10 to 15 minutes. Drain thoroughly in a sieve without applying pressure and gently dry with a kitchen towel. Place the tomatoes, along with fresh or dried herbs, in clean screw-top jars and fill with olive oil. Let stand for two weeks before eating.
