Ingredients for 8 servings:

  • 1 kg fish fillet(s) (matjes)
  • 1 liter buttermilk
  • 500 g Miracle Whip Balance or yogurt or natural
  • 5 juniper berries
  • 2 bay leaves
  • 2 large onions
  • 1 small jar of capers
  • 1 small jar of pickled gherkins (cucumber sticks)
  • 2 apples, sweet and sour (e.g. Braeburn)
  • n. B. Pfeffer
  • e.g. sugar or sweetener

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Matjes in buttermilk marinade

Place the herring fillets in a sieve and drain off the oil. Mix the Miracle Whip and buttermilk in a bowl to form a uniform marinade. Drain the capers. Peel and dice the apples. Dice the cucumber sticks as well. Peel the onions and slice them into rings. Add the diced apples and cucumbers, onion rings, drained capers, bay leaves, and juniper berries to the marinade and season with pepper and sweetener to taste. Now add the drained herring fillets – if you like, you can cut them into bite-sized pieces first. Stir everything together and let it marinate in a cool place (e.g., the refrigerator or cellar) until ready to serve – ideally overnight. Serve with boiled potatoes, fried potatoes, or hearty bread.
