Pickled herring fillets

Ingredients for 4 servings:

  • 1 pack of herring fillet(s)
  • 2 cups of crème fraîche
  • 2 cups whipped cream
  • 7 small gherkins
  • 3 onions
  • 5 bay leaves
  • 5 juniper berries
  • 5 tbsp vinegar
  • 2 tbsp, levelled sugar
  • 1 pinch(s) of salt and pepper
  • some milk, if necessary

Instructions

Working time approx. 25 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 25 minutes

Put the crème fraîche and cream in a large bowl and whisk until smooth. Add the sugar, vinegar, salt, and pepper and mix. Remove the herring from the package and drain thoroughly in a sieve. Meanwhile, warm the bay leaves and juniper berries in a pan to release the aroma, then add them to the bowl. Peel and halve the onions, then slice them. Finely dice the gherkins. Add all the ingredients (including the herring) to the bowl. Let everything rest in the fridge for at least 4-5 hours, but it tastes best if made the evening before and left to marinate overnight. If the sauce is too thick, dilute it with a little milk. Potatoes go best with it.
