Pickled herring, Finnish style

Ingredients for 4 servings:

  • 6 salted herring(s)
  • 2 large onions, red
  • 1 large carrot(s)
  • 1 tbsp allspice, whole
  • 2 tsp black pepper, whole
  • some bay leaves
  • 250 ml vinegar
  • 200 ml water
  • 5 tbsp sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

The herring are gutted if necessary, but not boned. Then soak in skimmed milk, tea, or water for 24 hours. Bring the sauce to a boil and let it cool. Cut the fish into 2cm pieces and layer them with the spices and chopped vegetables in a large preserving jar. Pour the cold sauce over the fish and seal the jar. Refrigerate for at least 3 days. It will keep in the refrigerator for several weeks, and the bones are guaranteed to be gone.
