Pickled Limburger with beer

Ingredients for 2 servings:

  • 200 g cheese (Limburger)
  • 1 onion(s)
  • 50 ml oil
  • 4 dashes vinegar
  • 100 ml beer
  • 1 pinch(s) paprika powder, hot and sweet
  • 1 pinch of salt
  • 1 pinch(s) of pepper

Working time approx. 10 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 10 minutes

First, halve the Limburger lengthwise, then cut into slices approximately 3 mm thick. Cover the bottom of a bowl with a little oil. Add the Limburger. Now gently stir in a little vinegar and the beer. Season with paprika, salt, and pepper, if desired. Slice the onion into rings and place on top. Let everything marinate in the refrigerator for several hours. Serve with some crusty, buttered farmhouse bread. For the beer: The best flavor is achieved with a dark (smoked) beer. If children are eating with you, a non-alcoholic beer works just as well.
