Ingredients for 3 servings:

  • 9 herring fillets
  • 600 ml cream
  • 1 apple
  • 3 medium-sized gherkins, diced
  • 1 m.-sized carrot(s)
  • 2 m.-large shallot(s)
  • 2 eggs, hard-boiled, chopped
  • 5 bay leaves
  • 5 carnations
  • 5 juniper berries
  • 1 tsp mustard
  • 3 tbsp vinegar (Melfor)
  • salt and pepper

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Total time approx. 1 day 30 minutes

Recipe with apple, cream and fine spices

Prepare two bowls. Pour the cream into one bowl, add all the spices and mustard, including the vinegar. Add the finely chopped carrot and apple, the sliced ​​shallots, the eggs, and the gherkins to the cream. Season well with salt and pepper. Mix the finished sauce thoroughly and set aside for about an hour. During this time, soak the herring in water. Then place a layer of herring in the second bowl and pour the sauce over it. Continue this process until all the herring is marinated. Cover the bowl and refrigerate for 24 hours. Jacket potatoes make a perfect side dish.
