Ingredients for 1 servings:

  • e.g. zucchini
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 bay leaf
  • 2 tsp mustard seeds
  • 1 stalk of dill, dried
  • ¼ tsp peppercorns
  • 1 small onion(s)
  • 1 clove(s) garlic
  • 1 part vinegar
  • 3 parts water

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Zucchini pickled like gherkins, for a 700 ml screw-top jar

Peel and deseed the zucchini, then cut into pieces. Peel the onion and garlic clove as well. Place all the spices in a clean screw-top jar, fill with the chopped zucchini, and pour in the vinegar and water mixture until everything is covered. Seal the jars tightly and bring to a boil in a water bath (preserving pan). After 8 minutes of boiling, turn off the heat and let it cool in the water bath.
