Pig in Ham Coat

- 400 g Potatoes
- 2 Carrots
- 1 Onion
- 100 g Mushrooms
- 280 g Pork steaks
- 10 ml Mustard medium hot
- 80 g Ham
- 1 tablespoon Tomato paste
- 200 ml Cream
- 1 tablespoon Butter
- Salt
- Pepper from the grinder
- Peel and quarter the potatoes. Put the potatoes in a large saucepan with plenty of cold water, season with salt and bring to the boil, covered. Then simmer for about 10 minutes.
- In the meantime, peel the carrots and cut them into thin slices. About 7 minutes before the end of the cooking time of the potatoes, place the carrots in a sieve, hang them over the potatoes in the pot and let them steam covered.
- Now peel the onion and cut into thin slices. Clean and quarter the mushrooms.
- Brush the pork with half of the mustard and wrap each with 2 slices of ham. In a pan without fat, crispy the pork with the ham seam down over medium heat, fry for a few minutes on each side. Then take it out of the pan and let it rest.
- In the same pan, fry the mushrooms and onion strips briefly over medium heat without any additional fat. Add 1 tablespoon of tomato paste, stir, fry briefly. Deglaze with the cream, stir in the remaining mustard and simmer. Season to taste with salt and pepper.
- Drain the potatoes and stir in 1 tablespoon of butter. Now arrange the meat, potatoes and carrots on plates and add the mushroom and cream sauce. Sprinkle with a little cress or herbs to taste.
