Pine meringue stars

Ingredients for 45 servings:

  • 175 g pine nuts
  • 1 egg(s)
  • 150 g butter or margarine
  • 275 g flour
  • 125 g powdered sugar
  • Powdered sugar, for sprinkling

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Roast 100g pine nuts in a pan without fat until fragrant and then finely grind in a food processor. Separate the egg. Knead the fat, flour, 50g icing sugar, ground pine nuts and egg yolk into a smooth dough. Wrap in foil and chill for one hour. Roll out the dough to a thickness of about 3mm and cut out stars. Place on baking sheets lined with baking paper. For the meringue, sift 75g icing sugar. Beat egg whites until stiff, gradually adding the icing sugar. Cover the stars with this mixture. Sprinkle with 75g pine nuts. Bake in a preheated oven (electric oven: 175°C/fan: 150°C) for 18-20 minutes. Allow to cool, then sprinkle with a little icing sugar.
