Pineapple – Banana – Jam

Ingredients for 8 servings:

  • 2 pineapples (approx. 1.2 kg)
  • 7 bananas (approx. 800 g)
  • 1 kg gelling sugar (2:1)
  • 1 vanilla pod(s)
  • 8 tbsp white rum

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

for approx. 8 glasses (250 ml each)

Quarter the pineapple, peel it (remove the eyes), remove the hard core, and cut into small pieces. Peel and slice the bananas. Place the fruit in a large pot and puree using a hand blender, leaving some larger pieces. Mix the gelling sugar into the fruit puree. Split the vanilla pods lengthwise and add them. Bring everything to a boil and simmer for about 5 minutes, stirring constantly, until it sets. Stir in the rum. Immediately pour into the prepared jars and seal. If children are eating with you, substitute rum flavoring for the rum.
