Pineapple – Coconut – Dessert
The perfect pineapple – coconut – dessert recipe with a picture and simple step-by-step instructions.
- 1 Pineapple fresh
- 2 tbsp Sugar
- 2 tbsp Water
- 0,5 packet Custard powder
- 400 ml Coconut milk
- 200 g Quark
- 3 tbsp Sugar
- 1 Lime – zest
- 0,5 Lime – juice
- 3 sheet Gelatin white
- 100 g Whipped cream
- Soak gelatine in cold water.
- Peel the pineapple, remove the stalk and cut into small pieces. Melt the sugar in a saucepan, add the pineapple pieces and water and cook until soft. Mix the pineapple finely with the hand blender. Mix the pudding powder with a little water and add to the fruit, bring to the boil and set aside.
- In the meantime, mix the coconut milk with the sugar, lime zest and juice and the quark. Heat the gelatine in a saucepan and stir in the quark mixture with a spoon, then stir into the rest of the mixture, chill for 15 minutes. Fold the whipped cream into the quark mixture and divide into 5 glasses. Carefully distribute the pineapple mixture on top and let it cool well in the refrigerator.
