Pineapple – Coconut – Dessert

The perfect pineapple – coconut – dessert recipe with a picture and simple step-by-step instructions.

  • 1 Pineapple fresh
  • 2 tbsp Sugar
  • 2 tbsp Water
  • 0,5 packet Custard powder
  • 400 ml Coconut milk
  • 200 g Quark
  • 3 tbsp Sugar
  • 1 Lime – zest
  • 0,5 Lime – juice
  • 3 sheet Gelatin white
  • 100 g Whipped cream
  1. Soak gelatine in cold water.
  2. Peel the pineapple, remove the stalk and cut into small pieces. Melt the sugar in a saucepan, add the pineapple pieces and water and cook until soft. Mix the pineapple finely with the hand blender. Mix the pudding powder with a little water and add to the fruit, bring to the boil and set aside.
  3. In the meantime, mix the coconut milk with the sugar, lime zest and juice and the quark. Heat the gelatine in a saucepan and stir in the quark mixture with a spoon, then stir into the rest of the mixture, chill for 15 minutes. Fold the whipped cream into the quark mixture and divide into 5 glasses. Carefully distribute the pineapple mixture on top and let it cool well in the refrigerator.
