Ingredients for 4 servings:

  • 300 g pineapple pulp (diced)
  • 150 g yellow bell pepper(s) (pitted & diced)
  • 2 red onions (diced)
  • 10 tbsp chili pepper(s), green (diced)
  • 15 tbsp desiccated coconut
  • 2 tbsp vinegar (sherry vinegar)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Combine all ingredients in a bowl. Cover and let stand at room temperature for at least 10-15 minutes before serving. Tip: Pairs well with fried fish (especially red snapper), but also with chicken or duck dishes.
