Ingredients for 4 servings:
- 300 g pineapple pulp (diced)
- 150 g yellow bell pepper(s) (pitted & diced)
- 2 red onions (diced)
- 10 tbsp chili pepper(s), green (diced)
- 15 tbsp desiccated coconut
- 2 tbsp vinegar (sherry vinegar)

Combine all ingredients in a bowl. Cover and let stand at room temperature for at least 10-15 minutes before serving. Tip: Pairs well with fried fish (especially red snapper), but also with chicken or duck dishes.
