Pineapple-Mango Barbecue Sauce

Ingredients for 4 servings:

  • 1 ½ kg tomatoes
  • 100 g sugar
  • 3 tsp salt
  • 700 g pineapple
  • 1 mango(s)
  • 2 tsp white pepper
  • 2 tsp allspice berries
  • 2 tsp mustard seeds
  • 1 tsp ginger powder

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Cut the tomatoes into small pieces and place them in a large pot. Add the sugar and salt, bring to a boil and simmer gently. In the meantime, cut the pineapple and mango into small pieces and add them to the pot. Grind the allspice and mustard seeds in a mortar and pestle and add them to the pot with the other spices. Stir regularly to prevent them from burning. About 30 minutes after the last addition of the spices, scoop out any remaining fruit pieces with a ladle, place them in a fine-mesh sieve and press through. Anything remaining in the sieve is best chopped up in a blender or with a hand blender and added back to the pot. Simmer until the desired consistency is reached. Then pour the sauce into boiled jars or bottles. The sauce goes best with grilled poultry.
