Pistachio Parfait on Blackberry Mirror

- 3 Pc. Egg yolk
- 3 tbsp Honey
- 2 tbsp Advocaat
- 50 g Freshly chopped pistachios
- 200 g Blackberries
- Powdered sugar
- Lemon
- Beat egg yolks, honey and eggnog over a hot water bath to a thick cream. Then stir the whole thing cold. Add 200 g of whipped cream and the chopped pistachios to the cream.
- Line small molds with cling film and distribute the cream evenly in the mold. Place in the freezer for about 4 hours to freeze.
- Puree the blackberries with powdered sugar and lemon and strain through a fine sieve. Take the parfait out of the freezer 15 minutes before serving, it should be slightly thawed. Serve on the blackberry dish.
