Pistachio Parfait on Blackberry Mirror

The perfect pistachio parfait on blackberry mirror recipe with a picture and simple step-by-step instructions.

  • 3 Pc. Egg yolk
  • 3 tbsp Honey
  • 2 tbsp Advocaat
  • 50 g Freshly chopped pistachios
  • 200 g Blackberries
  • Powdered sugar
  • Lemon
  1. Beat egg yolks, honey and eggnog over a hot water bath to a thick cream. Then stir the whole thing cold. Add 200 g of whipped cream and the chopped pistachios to the cream.
  2. Line small molds with cling film and distribute the cream evenly in the mold. Place in the freezer for about 4 hours to freeze.
  3. Puree the blackberries with powdered sugar and lemon and strain through a fine sieve. Take the parfait out of the freezer 15 minutes before serving, it should be slightly thawed. Serve on the blackberry dish.
