Spicy Berry Jam
The perfect spicy berry jam recipe with a picture and simple step-by-step instructions.
- 1 Apple or pear (approx. 100 g pulp)
- 15 Black peppercorns
- 100 g Berry mix TK
- 125 g Preserving sugar 2: 1
- 100 ml Dry red wine
- 2 tbsp Balsamic vinegar
- 1 tsp Ginger bread spice
- 1 pinch Salt
- Peel and quarter the apple or pear and cut out the core. Dice the quarters small. Coarsely crush the peppercorns in a mortar. Put the pieces of fruit with mixed berries, pepper, preserving sugar, red wine, balsamic vinegar, gingerbread spices and a pinch of salt in a saucepan, bring to a boil, puree and let simmer for 2-3 minutes.
- Make the gel test. To do this, put 1 teaspoon of fruit mixture on a cold plate. If the mass does not gel within 1 – 2 minutes, let it boil a little more. Pour the berry jam into a clean twist-off glass while still hot, close and allow to cool.
- Tip 3: The jam goes well with cheese, winter roast recipes, e.g. roe deer, or to refine gravies.
