Ingredients
Pistacchio icecream
- 400 ml Milk
- 160 g Sugar fine
- 0,5 Vanilla pod
- 300 ml Cream
- 160 g Unsalted pistachios, peeled
- 2 Egg yolk
Strawberry ice cream
- 200 g Strawberries
- 70 g Sugar
- 0,5 Vanilla pod
- 1 Egg yolk
- 500 ml Cream
Fruit mirror
- 250 g Strawberries
- 1 tsp Honey
- 0,5 Lemon
- 1 bunch Mint
Instructions

- Finely chop the pistachios / (puree the strawberries). Dissolve the sugar and vanilla pulp (scrape the pulp out beforehand) in the milk and then add the grated pistachios / pureed strawberries. Let it soak in the fridge for 3 hours. Whip the cream until semi-stiff, whisk the egg yolks and fold them lightly into the whipped cream. Finally, fold in the pistachio mixture / strawberry mixture, place in the refrigerator or freezer for another 20 minutes and then whisk everything again briefly. Then fill in the ice cream maker for about 30 minutes.
Fruit mirror
- Puree the strawberries. Add honey, lemon and mint and puree again.
