Ingredients for 35 servings:
- 300 g flour
- 200 g butter
- 125 g sugar
- 1 egg(s)
- 1 egg(s), including the yolk
- 125 g ground pistachios
- ½ lemon(s), untreated, grated peel
- 1 egg(s), of which the egg white
- 50 g chopped pistachios
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes
Knead flour, butter, sugar, egg, egg yolk, ground pistachios, and lemon zest into a shortcrust pastry. Shape the dough into 2 cm thick logs and let them rest in the refrigerator for one hour. Cut the logs into 1 cm thick slices and form them into balls. Brush the balls with egg white and sprinkle with chopped pistachios. Place on a baking sheet lined with baking paper and bake in a preheated oven at 150°C for about 15 minutes.
