Pit Roast with Miner’s Schnapps, with Snowballs and Red Cabbage

  • 500 g Fresh red cabbage
  • 2 Pc. Apple
  • 2 Pc. Bay leaf
  • 4 Pc. Cloves
  • 50 g Clarified butter
  • Salt and pepper
  • 1 shot Balsamic vinegar
  • 1 Pc. Onion
  • 1 kg Beef
  • 500 g Soup greens fresh
  • 1 shot Red wine
  • 500 g Potatoes
  • 250 g Flour
  • 1 Pc. Egg
  • 1 pinch Nutmeg
  • Parsely
  1. Cut the red cabbage and wash in clarified butter, sauté with onions and apples. Then season with salt, pepper and balsamic vinegar and finally add the cloves and bay leaves.
  2. Brown the beef with salt and pepper, add the soup greens, deglaze with red wine and place in the oven for 3 hours at 90 degrees.
  3. Boil potatoes for the snowballs (in salted water the day before). Mash the potatoes and season with salt, pepper and nutmeg. Then make a dough out of egg and flour and form dumplings and let them steep in salted water.
