Ingredients for 3 servings:

  • 160 ml milk, room temperature
  • 80 ml water, room temperature
  • 1 tsp sugar
  • 2 tsp dry yeast
  • 2 tsp olive oil
  • 350 g flour
  • 1 tsp salt
  • 1 tsp thyme, fresh or dried
  • Oil for the work surface

Instructions

Working time approx. 10 minutes; Rest time approx. 40 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 20 minutes

for pita souvlaki or pita gyros

Combine milk, water, sugar, and yeast in a bowl and let stand for 5 minutes until the mixture begins to bubble. In another bowl, combine the flour, salt, and thyme. Then add the oil to the other liquids and gently mix everything into the flour mixture. The dough should still be slightly sticky, but not too sticky; add more flour if necessary. Knead everything for 5 minutes. Then, place it in an oiled bowl and cover with a tea towel and let it rise for 40 minutes. Heat a pan over medium heat. Knead the dough briefly again and divide it into 6 pieces. Roll out into 20 cm circles on an oiled work surface and cook in the pan for about 1-2 minutes on each side. Depending on the desired browning and the heat of the pan, we like to fill them with the following: tzatziki, meat of your choice (loukaniko, gyros, souvlaki), lettuce, tomatoes, fries, feta cheese, ketchup, and mustard.
