Ingredients for 1 servings:
- 1,000 g flour (type 405)
- 750 g water
- 80 g olive oil
- 2 tsp sugar
- 1 ½ tsp salt
- sesame
- Black cumin
- 1 cube of yeast or 2 packets of dry yeast
Instructions
Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes
Weigh the flour, water, sugar, salt, yeast, and olive oil into a large bowl and knead. Don’t choose a bowl too small, as the dough will expand considerably as it rises. Cover the bowl, preferably with a lid, and let it rise in a warm place for about 45 minutes. Knead again with a mixer and dough hook and let it rise for another 20 minutes. Spread the dough onto two baking sheets lined with baking paper. Don’t be alarmed, it will be very soft. Lightly oil your fingers and flatten the dough to a thickness of about 1.5 cm. Brush with water and generously spread the black cumin and sesame seeds over both loaves. Preheat oven to 250°C (220°C fan-assisted). Wait until the dough clearly rises to the baking sheet, then bake for about 15-25 minutes, until the bread is golden brown.
