Ingredients for 5 servings:

  • 500 g beans, white from the can
  • 2 onions, white
  • ¼ bunch parsley
  • ½ lemon(s), juice
  • 1 tsp vinegar, light
  • salt and pepper
  • Sumac
  • olive oil
  • 3 avocados
  • 5 gherkins
  • 1 pomegranate, seeds removed
  • 3 eggs, hard-boiled
  • Cucumber water
  • 1 tsp tahini

Working time approx. 20 minutes; Total time approx. 20 minutes

Rinse the beans with cold water and place them in a large bowl. Finely chop the onions, parsley, avocados, gherkins, and eggs and mix with the beans. Season to taste with the spices, vinegar, lemon juice, olive oil, and cucumber juice. Sprinkle the pomegranate seeds on top. Faruk prepared this recipe as an appetizer on the show “The Perfect Dinner” – Day 2 in the Rhine-Main region – on Tuesday, February 13, 2024.
