Ingredients for 3 servings:

  • 80 g wholemeal spelt flour
  • 50 g oat flakes, fine
  • 50 g sunflower seeds
  • 40 g millet
  • 40 g seeds, mixed (for bread)
  • 20 g Parmesan, finely grated
  • 1 tsp, heaped herbs, Italian
  • 1 tsp cayenne pepper
  • ½ tsp salt
  • 250 ml water
  • 1 tbsp olive oil
  • 1 tbsp, heaped tomato paste, approx. 20 g each

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

Preheat the oven to 160 degrees Celsius (top/bottom heat). Mix all the dry ingredients. Then add the water, olive oil, and tomato paste. Mix everything well. The dough should be sticky. Add flour if necessary. Line a baking tray with baking paper and spread the dough evenly. Bake the dough on the lowest rack for 10 minutes, then remove and cut into 3 cm pieces using a pizza cutter. Return the baking tray to the oven and bake the dough for another 10 minutes. Then reduce the temperature to 120 degrees Celsius (250 degrees Fahrenheit) and bake the dough for another 20 minutes. The crackers should be crispy and dry. Tip: If the dough is still too moist after this, simply switch on the fan and open the oven door slightly.
