Baked pan-fried zucchini with curry

Ingredients for 2 servings:

  • 1 m.-large zucchini
  • 1 onion(s)
  • 1 garlic clove(s)
  • some bacon, optional
  • 2 m.-large tomato(s)
  • ¼ package grated cheese, approx. 50 g
  • 1 tbsp Parmesan, grated
  • some curry powder
  • salt and pepper
  • Paprika powder, sweet

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

simple, quick and delicious

First, slice the zucchini into thin to medium-sized slices and then quarter or halve the slices, depending on their size. Cut the bacon (optional and depending on how much you want) into small cubes. Peel and chop the onion and garlic. Cut the tomatoes into quarters. Sauté the garlic and onion in a little oil in a pan. Add the bacon (optional). Once the onion is translucent, add the zucchini. Sauté until the zucchini is firm to the bite. Then add the seasonings to taste. Mix in the tomatoes and top everything with cheese directly in the pan. Simply place the lid on the pan and cook for a few minutes over low heat. Bread or baguette goes well with it. Variation: Brown the sausage and mix in.
