Preheat the oven to 50°C (top/bottom heat). In a large bowl, mix the flour, dried yeast, salt, sugar, oregano, and paprika well. Stir the olive oil into the mixture and add the lukewarm water. Knead everything with clean hands until you have a smooth dough, i.e. the dough comes away from your hand and the bowl. Turn off the oven and cover the dough in the bowl with a tea towel. Place the covered dough on the floor of the oven, close the oven door, and let the dough rise for 1.5 hours. Remove the risen dough from the oven and knead briefly again. Roll out the dough into a rectangle on a lightly floured work surface. Lightly grease the oven tray with oil and place the rolled out dough on it. The dough needs to be slightly larger than the baking tray to allow for a pizza edge. Fold over the excess dough to form a pizza edge. Spread the pizza with 200g of hollandaise sauce, top with ham and/or pepperoni salami and mushrooms cut into 1cm thick slices. Drizzle the remaining hollandaise sauce over the pizza and sprinkle with cheese and oregano. Cover and let the pizza rise for another 30 minutes. Preheat the oven to 180°C (top/bottom heat). Bake the pizza on the middle rack for 20-25 minutes. Remove the pizza from the oven and cut into 6 equal slices. Sprinkle with the fried onions.
