Ingredients for 4 servings:
- 3 onions
- 2 bell peppers, yellow
- 2 bell peppers, red
- 2 garlic cloves
- 600 g minced meat, mixed
- 2 tbsp breadcrumbs
- 1 tbsp mustard, medium hot
- 1 egg(s)
- salt and pepper
- 2 tbsp pizza seasoning
- 2 tbsp oil
- 3 tbsp tomato paste
- 600 ml vegetable stock
- 1 tomato(s)
- 4 slices of cheese (Gouda)
- Parsley
Instructions
Working time approx. 50 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 30 minutes
Peel the onions, finely dice 1 onion and roughly dice 2 onions. Clean the bell peppers and cut into strips. Finely chop the garlic. Knead the minced meat with the finely diced onion, breadcrumbs, mustard, egg, 1 teaspoon of salt, pepper, and pizza seasoning. Form 8 meatballs from the meat mixture. Heat the oil and fry the meatballs for about 5 minutes on each side, then remove. Sauté the coarsely diced onion and garlic in the frying fat, then add the bell pepper strips. Sauté everything for about 3 minutes. Stir in the tomato paste and sauté, then pour in the stock and bring to a boil. Place the vegetables in a baking dish and arrange the meatballs on top. Cut the tomato into 8 slices and halve the cheese slices. Top each meatball with 1 tomato slice and 1/2 a cheese slice. Bake in a preheated oven (top/bottom heat: 225°C, fan oven: 200°C) for about 20 minutes. Sprinkle the meatballs with parsley and serve.
