Ingredients for 12 servings:
- 1 red bell pepper(s)
- 150 g corn (from the can
- 150 g flour
- 100 g corn flour
- 1 packet of baking powder
- some baking soda
- Salt
- pepper
- 2 tsp paprika powder, sweet
- 150 g cheese (Gouda), grated
- 2 eggs
- 60 ml oil
- 300 g yogurt
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Preheat the oven to 175°C. Line the muffin tin with paper baking cups. Rinse the bell peppers and dice them into small pieces. Drain the corn well. Combine the flour, cornmeal, baking powder, baking soda, salt, pepper, and 1 teaspoon of paprika. Beat the eggs and stir in the oil and yogurt. Mix the flour mixture with the egg mixture and fold in the diced bell peppers and corn kernels. Pour the batter into the muffin tins. Sprinkle the remaining grated cheese over the muffins and dust with the remaining paprika. Bake the muffins in the oven for about 25 minutes until golden brown.
