Ingredients for 1 servings:
- 125g mozzarella
- 1 bell pepper(s)
- 250 g flour
- 2 tsp baking powder
- ½ tsp baking soda
- 1 tsp salt
- 1 tsp oregano
- 1 egg(s)
- 50 ml olive oil
- 150 ml buttermilk
- 100 g tomatoes, pureed or fresh
- 1 garlic clove(s)
- 3 tbsp Parmesan, grated
- Fat, for the molds
Instructions

with tomatoes and peppers
Preheat the oven to 200°C. Grease the muffin tins. Drain the mozzarella, wash and trim the bell peppers, and finely dice both. Sift the flour and baking powder into a bowl and mix with the baking soda, salt, pepper, and oregano. Stir in the mozzarella and diced bell peppers. In a bowl, whisk the egg with oil, buttermilk, and tomatoes. Peel the garlic and press it through a press. Fold in the flour mixture and fill the batter into the tins. Sprinkle with Parmesan cheese, bake for 20 to 25 minutes, let cool slightly, and remove from the tin. Variations: Replace the buttermilk with 125 ml milk. Substitute the mozzarella with other cheeses, or mix several together.
