Pizza rolls with sardines

Ingredients for 2 servings:

  • 1 pack of pizza dough, or equivalent amount of homemade
  • 2 cans of sardines
  • 1 lemon(s), organic
  • 1 bunch of parsley
  • 1 dash of olive oil
  • 2 garlic cloves, peeled
  • salt and pepper
  • some flour
  • 3 tsp capers
  • 2 tsp sea salt
  • possibly oregano
  • possibly basil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Preheat the oven to 230°C. Grate the lemon zest and squeeze out the juice. Chop the parsley, finely chop the garlic, and add it. Add a dash of olive oil, then mix well with salt and pepper. Marinate the sardines in the marinade and let it sit for a good 10 minutes. In the meantime, roll out the pizza dough thinly on a floured surface and cut into squares about 10×10 cm. Place the sardines on top and roll them in the dough. Place the rolls on the baking sheet with floured hands, drizzle with a little marinade, and bake in the oven for a good 10 minutes. Once lightly browned, remove from the oven. Mix the capers with sea salt, crush them slightly (or add herbs like oregano and basil if desired), and sprinkle them on the finished rolls. Serve while still warm. The rolls are also delicious cold the next day!
