Skinny Banana Nut Muffins

Ingredients for 15 servings:

  • 2 large bananas, mashed
  • 2 eggs
  • 1 ½ cups flour
  • ½ cup(s) nuts, ground (hazelnuts, walnuts or almonds)
  • 2 tsp baking powder
  • 1 tsp cinnamon powder
  • ½ cup(s) applesauce, unsweetened if possible
  • 5 drops of vanilla extract
  • ½ cup(s) milk
  • e.g. Stevia

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 18 minutes; Total time approx. 43 minutes

Banana nut muffins, low in calories, no sugar or fat, stevia

Mix all ingredients, including the vanilla extract, with a mixer. Slowly add milk until a smooth batter forms. Then add stevia in very small amounts until the batter reaches the desired sweetness. Note: The muffins will taste slightly less sweet than the batter! Divide the batter between muffin cups and bake at 190°C for 15-18 minutes. Tip: The amount needed varies depending on the type of stevia product you use (drops, powder, or diluted powder). I use the diluted powder, where one teaspoon of stevia is equivalent to one teaspoon of sugar; you need about 1/4 to 1/2 cup of this.
