Ingredients for 2 servings:

  • 400 g potatoes (rösti or grated potatoes)
  • 2 tomatoes
  • 5 tbsp mascarpone
  • Cheese, grated
  • salt and pepper
  • n. B. herbs
  • possibly butter

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Prepare rösti or fry potatoes with butter and salt in a pan until golden brown. Fry for 5 minutes, turning occasionally. Shape into a cake and bake at reduced heat for about 15 minutes. Turn out onto a platter. Slice tomatoes and place on the rösti. Sprinkle the tomatoes with grated cheese to coat them well. Drop dollops of mascarpone cheese onto the rösti. Season with salt, pepper, and herbs. Bake in the oven at 200°C for about 20 minutes.
