crispy pizza with juicy crust, for 16 slices

Dough: Mix flour and yeast. Add remaining ingredients and knead into a smooth dough. Cover and let rise in a warm place until visibly larger. Grease baking sheet. Preheat oven. Conventional heat: about 200°C / Fan oven: about 180°C. Topping: Drain mushrooms. Quarter salami and ham, if desired. Drain mozzarella and slice. Cut Gouda into 1/2 cm wide sticks. Knead the dough briefly again on a well-floured surface and roll out slightly larger than the baking sheet. Place the piece of dough on the baking sheet, overlapping slightly at the edges. Place Gouda sticks along the edge of the dough, fold it over, and press down firmly. Spread pizza sauce on the dough and season with salt, pepper, and oregano, if desired. Spread half of the grated cheese on top and top with mushrooms, salami, ham, and mozzarella. Spread the remaining cheese on top and bake for about 30 minutes. Cut the pizza into slices and serve.
