Plum and apple salad

Ingredients for 4 servings:

  • 2 apples
  • 8 plums
  • 2 oranges
  • 2 cups of yogurt (180 g each)
  • ½ vanilla pod(s)
  • 4 tbsp sugar
  • 1 pinch(s) cinnamon powder
  • 2 tbsp Calvados
  • 4 tbsp honey
  • 1 handful of almond sticks, roasted without fat

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 50 minutes

Finely grate the zest of half an orange. Squeeze the juice from both oranges. Split the vanilla pod lengthwise and scrape out the seeds. Place the orange zest, orange juice, vanilla seeds, cinnamon, and sugar in a small pan, bring to a boil, and simmer gently for 3-4 minutes. Then let cool. Halve the plums, remove the stones, and cut into thin wedges. Peel, quarter, and core the apples. Cut the quarters into thin slices. Mix with the plum wedges and the orange and vanilla juice. Season to taste with a little Calvados and let the apples steep for 30 minutes. Stir the yogurt until smooth and serve with the plum and apple salad in glasses or dessert bowls. Drizzle with a little honey and sprinkle with the slivered almonds.
