Plum and quark casserole

Ingredients for 4 servings:

  • 1 jar plums or prunes
  • 100 g sugar
  • 500 g low-fat curd cheese
  • 3 eggs, separated
  • 2 tsp, crushed cream of tartar
  • 60 g cornstarch
  • 10 g butter
  • 2 tbsp breadcrumbs

Working time approx. 20 minutes; Total time approx. 20 minutes

Sweet casserole that also tastes good cold in summer

Drain the plums or prunes. Reserve the juice for another purpose. Whisk the quark with the egg yolks, baking powder, cornstarch, and sugar until smooth. Beat the egg whites with a pinch of salt until stiff peaks, then fold the beaten egg whites into the quark mixture. Pour half of the quark mixture into a buttered baking dish. Spread two-thirds of the plums on top. Cover with the remaining quark, scatter the remaining plums on top, and press in lightly. Sprinkle the casserole with breadcrumbs and knobs of butter. Bake on the middle rack at 175°C (160°C fan oven) for about 70 minutes. This casserole is delicious hot or cold.
