Ingredients for 1 servings:
- 125 g sugar
- 125 g margarine
- 2 eggs
- 1 packet of vanilla sugar
- 200 g flour
- 1 tsp, leveled baking powder
- 3 tbsp milk
- 750 g plums or prunes
- Sugar
- Cinnamon

Plum cake made from sponge cake
Beat the sugar, margarine, eggs, and vanilla sugar until fluffy. Mix the flour with the baking powder and sift it over the egg mixture. Add 3 tablespoons of milk and knead into a creamy dough. Pour into a greased 22cm springform pan and smooth the surface. Wash and pit the plums, but do not cut through them. Press the pitted plums, unfolded and upright, into the batter in a circle from the outside in. Done. Now bake the cake for about 60 minutes at 200°C on the middle rack. Let it cool slightly and place it on a cake plate. Finally, mix 1 teaspoon of sugar with 1 teaspoon of cinnamon and sprinkle the cake with it. It’s guaranteed to be a success every time! You can also use apples or peaches instead of plums. In this case, the cake is sprinkled with powdered sugar instead of cinnamon and sugar. If you pour the batter into a 30cm tart pan, you get a great tart base. Baking time then approx. 15-20 minutes at 200 degrees.
