Plum cake with marzipan

Ingredients for 1 servings:

  • 125 ml milk
  • ½ cube of yeast
  • 200 g wheat flour type 405
  • 35 g sugar
  • 1 small egg(s)
  • 1 pinch of salt
  • 30 g butter, soft
  • 750 g plums
  • 40 g butter
  • 100 g marzipan paste
  • 2 tbsp Amaretto or rum
  • 1 egg(s)
  • ½ tsp cinnamon powder
  • 2 tbsp sugar

Instructions

Working time approx. 40 minutes; Rest time approx. 45 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 50 minutes

for a 24 x 24 cm square springform pan

Preheat the oven to 180°C (top/bottom heat). Grease a square baking pan. Dissolve the crumbled yeast in lukewarm milk and let it rise until it has doubled in size. Combine the flour, sugar, egg, softened butter, and salt in a mixing bowl. Add the yeast and knead everything into a smooth yeast dough. Cover the dough and let it rise in a warm place for 30 minutes. Coarsely grate the marzipan and mix well with the rum, butter, and egg. Pit the plums. Knead the yeast dough again, pour it into the baking pan, and spread it evenly. Spread the marzipan mixture over the top and let it rise for another 15 minutes. Then arrange the plums on top of the dough in the shape of a roof tile. Place the cake in the preheated oven and bake for about 25 minutes. Mix the cinnamon and sugar and sprinkle the cake with it 5 minutes before the end of baking. Note: For a baking tray or oven tray, use double the amount of ingredients.
